Recipe: Side - Pesto Spread
It's turned out to be a surprisingly hot summer, so traditional pesto doesn't work nearly as well as this cool, delicious spread with that same basil taste. Check the recipe notes for a quick deconstruction of this into an actual pesto-for-pasta pesto but do give this one a shot. It's great on toast, crackers, or any other spreadable you've got in your pantry.
1 cup basil leaves
1/2 cup parsley (or other greens)
1/3 cup good olive oil
2-3 cloves garlic, minced
1/4 cup walnuts (or pine nuts or almonds)
salt to taste
1/3 cup cream cheese (or non-dairy substitute)
Combine all ingredients except cream cheese in a blender.
Add the cream cheese and hand mix with a spoon or continue very slowly with the blender.
- The difference between this recipe and regular pesto is obviously the cream cheese. But the "spread" format also allows you to be looser with the substitutions like almonds or kale. You can use the same directions above, but just use a 1/8 cup parmesan cheese or non-dairy substitute in place of the cream cheese.
